Aloha Pineapple Pancakes

They’re light and fluffy pancakes, with crispy edges and caramelized sugars from the juices of the pineapple, that we enjoyed with a dollop of apple pear ginger jam on top.
Aloha Pineapple Pancakes

INGREDIENTS:

  1. 1 cup flour 00
  2. 1 and 1/2 tbsp sugar
  3. 1 tbsp baking powder
  4. 1/2 tsp baking soda
  5. pinch of salt
  6. 3/4 cup almond milk
  7. 1 egg
  8. 1 tsp vanilla
  9. 1/2 cup fresh pineapple, chopped
  10. maple syrup or jam of your liking

INSTRUCTIONS:

  1. In a bowl sift flour, sugar, baking powder, baking soda and salt.
  2. In another bowl mix almond milk, vanilla.
  3. Separate the egg and add the yolk to the milk.
  4. Mix wet ingredients into dry ingredients.
  5. Beat the egg white senseless till it forms peaks.
  6. Fold egg white gently into the batter.
